Ingredients (makes ~4–5 jars)
- 8–10 ripe tomatoes (small diced)
- 1 medium red onion (finely chopped)
- 1–2 jalapeños or serrano peppers (minced)
- 3–4 garlic cloves (minced)
- 1 cup fresh cilantro (chopped)
- Juice of 2–3 limes
- 1–2 tsp salt (to taste)
- ½ tsp black pepper
- Optional:
- 1 tsp sugar (balances acidity)
- ½ tsp cumin (adds warmth)
- 1–2 tbsp olive oil (adds smoothness)
Instructions
- Prepare the vegetables
Dice tomatoes into small chunks. Finely chop onion, peppers, and cilantro so every bite has a mix of flavors. - Mix everything together
In a large bowl, combine all ingredients. Stir gently so tomatoes stay chunky. - Season and adjust
Add lime juice, salt, and pepper. Taste and adjust until it’s fresh, slightly tangy, and well-balanced. - Transfer to jars
Spoon into clean jars, pressing lightly to remove air gaps. - Chill before serving
